What it is
Solos is not a way to strip alcohol. It is Prodalim’s recovery module, bolted onto Centec’s DeAlcoTec vacuum still, for smell and taste that would otherwise leave with the ethanol.
How it runs
Under vacuum, alcohol leaves the wine and takes a large share of the volatiles with it. Solos then runs its single-phase extraction (SPE) on that distillate, picks those compounds — the essence — and puts them back into the dealcoholized wine, so the nose has somewhere to go.
Against older capture kit such as spinning cone or GoLo, the point is not to flatten the aromatic profile.
