What it is
ClearAlc is Tomsa Destil’s vacuum distillation kit, launched in 2024. Three packed columns, vacuum, and low heat so the wine’s fragile compounds are not cooked.
How it runs
After the alcohol is gone, the cellar can take and dose up to four cuts: volatiles, heads, hearts and tails. That essence is folded back in, which gives more say over the nose than a plain still.
It is framed as one of the more precise recovery systems for no-alcohol wine: more control over how the sensory profile is put back together than textbook vacuum distillation.
