What it is
GoLo is BevZero’s take on the old spinning-cone still. One pass, very-low-temperature distillation (VLTD), so the wine’s fragile bits see less heat while ethanol leaves.
How it runs
Instead of two cycles, it lifts one combined aroma fraction as the alcohol comes off. Fewer stages, less energy. The essence is put back once the wine is dealcoholized.
A unit runs in Villatobas, Spain. BevZero describes a continuous thin film with no spinning cones, meant to drop ABV in a single run.
